Authentic Birria Tacos (Mexican Jalisco Style)

Description

Slow-cooked beef birria tacos with crispy consommé-dipped tortillas. Rich, bold, and authentic Jalisco flavor in every bite.


Ingredients

  • 2 lbs (900g) beef chuck roast or short ribs
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 12 chiles de árbol (optional, for spice)
  • 1 onion, chopped
  • 4 garlic cloves
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 2 bay leaves
  • 2 cups beef broth
  • Salt and black pepper
  • 12 corn tortillas
  • 1 cup shredded Oaxaca cheese (or mozzarella)
  • ½ cup diced onion
  • Fresh cilantro
  • Lime wedges

Instructions

  1. Toast guajillo, ancho, and árbol chiles in a dry pan for 1-2 minutes until fragrant. Soak in hot water for 10 minutes.
  2. Blend soaked chiles with onion, garlic, cumin, oregano, smoked paprika, and 1 cup broth until smooth. Strain to remove skins and seeds.
  3. Season beef with salt and pepper. Sear in a large pot until browned on all sides.
  4. Pour chile sauce and remaining broth over the meat. Add bay leaves. Cover and simmer on low for 2.5 to 3 hours until fork-tender.
  5. Remove meat and shred with two forks. Return to the pot and mix with the broth.
  6. Skim the red chili oil from the top of the broth. Reserve this oil for frying the tortillas.
  7. Heat a skillet over medium heat. Dip each tortilla in the red oil, place in the skillet, add shredded meat and cheese, fold in half, and fry 2-3 minutes per side until golden and crispy.
  8. Serve with warm consommé in small bowls for dipping. Garnish with diced onion, cilantro, and lime wedges.

Notes

For the most traditional version, use goat or lamb instead of beef. Leftover consommé makes an excellent soup base. Birria freezes well for up to 3 months. Reheat in the consommé for best results.
