A hearty and flavorful Vegan Black Bean Soup loaded with spices and fresh toppings. Perfect for a quick, healthy meal.
Ingredients

- 2 cans black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 3 cups vegetable broth
- Salt and pepper, to taste
- Optional toppings: cilantro, lime, avocado, tortilla strips
Instructions
- Heat olive oil in a pot. Sauté onions until soft.
- Add garlic and stir for one minute.
- Add cumin, smoked paprika, chili powder, and oregano. Stir to coat.
- Add black beans and vegetable broth.
- Simmer 15–20 minutes.
- Blend part of the soup for a creamy texture (or leave chunky).
- Season with salt and pepper. Serve warm with fresh toppings.
Notes
Blend more or less depending on your preferred texture. Add lime juice for brightness. For extra creaminess, stir in a spoonful of mashed beans.
