Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 3 cups vegetable broth
  • Salt and pepper, to taste
  • Optional toppings: cilantro, lime, avocado, tortilla strips

Instructions

  1. Heat olive oil in a pot. Sauté onions until soft.
  2. Add garlic and stir for one minute.
  3. Add cumin, smoked paprika, chili powder, and oregano. Stir to coat.
  4. Add black beans and vegetable broth.
  5. Simmer 15–20 minutes.
  6. Blend part of the soup for a creamy texture (or leave chunky).
  7. Season with salt and pepper. Serve warm with fresh toppings.

Notes

Blend more or less depending on your preferred texture. Add lime juice for brightness. For extra creaminess, stir in a spoonful of mashed beans.
