Ingredients

  • 2 ¼ tsp active dry yeast
  • 33 ½ cups all-purpose flour
  • ½ cup warm milk
  • 2 tbsp melted butter (+ more for brushing)
  • 1 cup warm water
  • 2 tbsp sugar
  • 1 tsp salt

Instructions

  1. In a large bowl, mix 1 cup warm water with 2 tsp sugar until dissolved. Sprinkle in yeast and let sit 5–10 minutes until foamy.
  2. Add ½ cup warm milk, 2 tbsp melted butter, 2 tbsp sugar, and 1 tsp salt to the yeast mixture. Stir well.
  3. Gradually stir in 3 to 3 ½ cups of flour, one cup at a time, until the dough is slightly sticky but not wet.
  4. Cover the bowl and let dough rise in a warm spot for 1–2 hours, until doubled in size.
  5. Punch down the dough, divide into 12 portions, and shape into balls.
  6. Place on a greased or parchment-lined baking sheet. Cover and let rise for 30–45 minutes.
  7. Preheat oven to 375°F. Brush rolls with melted butter or egg wash.
  8. Bake for 15–20 minutes until golden brown and rolls sound hollow when tapped.

Notes

For best results, ensure your yeast is fresh and water temperature is between 100°F–110°F for proofing. Rolls can be refrigerated overnight before baking.
