- 1 tablespoon (7g) unflavored gelatin powder
- 1 scoop (25g) vanilla protein powder
- ¼ cup plain Greek yogurt
- 1 cup hot water (170°F / 75°C)
- ½ cup unsweetened almond milk
- 1 teaspoon raw honey or stevia (optional)
- 1 tablespoon chia seeds (optional)
Instructions
- Sprinkle gelatin over 2 tablespoons cold water. Let bloom for 2-3 minutes until spongy.
- Pour 1 cup hot water over the bloomed gelatin. Whisk until completely dissolved.
- Let cool for 2 minutes until warm but not hot.
- Whisk in vanilla protein powder until smooth with no lumps.
- Stir in Greek yogurt until creamy and well combined.
- Add almond milk, honey or stevia, and chia seeds if using.
- Pour into 2 jars or cups.
- Refrigerate at least 3 hours or overnight.
- Eat 15-30 minutes before a meal or as a high-protein afternoon snack.
Notes
For a simpler version, skip the protein powder and yogurt — just use gelatin, hot water, and cranberry juice. Make a batch of 5 jars on Sunday for easy weekly meal prep. Store in the fridge for up to 5 days. Avoid pineapple, kiwi, and mango — their enzymes prevent gelatin from setting. Let the mixture cool before adding yogurt to prevent curdling.
