- 1 lb (450g) ground beef (80/20)
- 8 small flour tortillas (fajita size)
- 8 slices American cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cooking oil or spray
- ¼ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 2 tablespoons sweet pickle relish
- 1 teaspoon white vinegar
- ½ teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- Pinch of salt and sugar
- Shredded iceberg lettuce
- Diced white onion
- Sliced pickles
Instructions
- Mix mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, onion powder, garlic powder, salt, and sugar in a small bowl.
- Refrigerate the sauce while you cook.
- Divide ground beef into 8 equal balls (about 2 oz each).
- Season beef with salt, pepper, garlic powder, and onion powder.
- Place one beef ball on each tortilla.
- Press flat with your fingers, spreading the meat thin to the edges.
- Heat a large skillet or griddle over medium-high heat.
- Lightly oil the surface.
- Place tortillas meat-side down and press firmly with a spatula.
- Cook 3–4 minutes without moving until beef is deeply browned and crispy.
- Flip carefully.
- Add a slice of cheese on top of the beef.
- Cover with a lid for 1–2 minutes to melt cheese and crisp tortilla.
- Remove from heat.
- Top with shredded lettuce, diced onion, pickles, and Big Mac sauce.
- Fold and serve immediately.
Notes
Use 80/20 ground beef for the juiciest results. Flour tortillas crisp better than corn for this recipe. Don’t move the tacos while the meat is cooking — let the crust form. Flip to a clean spot on the skillet to keep the tortilla crispy. Best eaten fresh. Store leftover sauce separately for up to 5 days.
