  • 8 small flour tortillas (fajita size)
  • 8 slices American cheese
  • 1 teaspoon garlic powder

  • Salt and pepper to taste
  • Cooking oil or spray
  • ¼ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Pinch of salt and sugar
  • Shredded iceberg lettuce
  • Diced white onion
  • Sliced pickles

Instructions

  1. Mix mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, onion powder, garlic powder, salt, and sugar in a small bowl.
  2. Refrigerate the sauce while you cook.
  3. Divide ground beef into 8 equal balls (about 2 oz each).
  4. Season beef with salt, pepper, garlic powder, and onion powder.
  5. Place one beef ball on each tortilla.
  6. Press flat with your fingers, spreading the meat thin to the edges.
  7. Heat a large skillet or griddle over medium-high heat.
  8. Lightly oil the surface.
  9. Place tortillas meat-side down and press firmly with a spatula.
  10. Cook 3–4 minutes without moving until beef is deeply browned and crispy.
  11. Flip carefully.
  12. Add a slice of cheese on top of the beef.
  13. Cover with a lid for 1–2 minutes to melt cheese and crisp tortilla.
  14. Remove from heat.
  15. Top with shredded lettuce, diced onion, pickles, and Big Mac sauce.
  16. Fold and serve immediately.

Notes

Use 80/20 ground beef for the juiciest results. Flour tortillas crisp better than corn for this recipe. Don’t move the tacos while the meat is cooking — let the crust form. Flip to a clean spot on the skillet to keep the tortilla crispy. Best eaten fresh. Store leftover sauce separately for up to 5 days.
