- ¾ cup all-purpose flour
- ¼ teaspoon salt
- Oil, for frying (vegetable or another neutral oil)
Instructions
- Mash the bananas in a bowl until mostly smooth, with a few small lumps left for texture.
- Add the flour and salt, stirring just until combined into a thick batter. Don’t overmix.
- Heat about ½ inch of oil in a skillet over medium heat.
- Spoon portions of batter into the hot oil, flattening each slightly with the back of the spoon.
- Fry for 2-3 minutes per side, until golden brown and cooked through in the center.
- Drain on paper towels briefly before serving warm.
Notes
Use bananas that are heavily spotted and very ripe — this is what gives the fritters their natural sweetness. Don’t overmix the batter, and keep the oil at a steady medium heat so the outside doesn’t brown before the inside cooks through. Best served immediately, while still crisp.
