Description
A warm, nutty caffeine-free infusion made from roasted buckwheat groats. Rich in rutin, quercetin and antioxidants — ready in under 10 minutes, no special equipment needed.

- 1 tablespoon roasted buckwheat groats (sobacha)
- 300 milliliters water
- 1 fresh ginger slice (optional)
- 1 teaspoon honey (optional)
- 1 teaspoon lemon juice (optional)
Instructions
- Heat 300 milliliters water to 90°C, just below a full boil.
- Place 1 tablespoon roasted buckwheat groats (sobacha) into a teapot or infuser cup.
- Add 1 fresh ginger slice if using.
- Pour the hot water over the groats.
- Steep for 3 to 4 minutes for a light and delicate flavor.
- Steep up to 5 minutes for a richer and nuttier flavor.
- Do not exceed 6 minutes of steeping.
- Strain the groats and pour the tea into a cup.
- Add 1 teaspoon honey and 1 teaspoon lemon juice if desired.
- Serve hot or pour over ice for a cold version.
Notes
Cold brew version: Add 1–2 tablespoons groats to 500 milliliters cold water and refrigerate overnight. Do not discard the groats after steeping — add them to porridge, smoothies, or overnight oats. Best enjoyed in the morning on an empty stomach or after meals.
