Description

Creamy cottage cheese queso made with blended cottage cheese, cheddar, green chiles, and taco seasoning. An easy cheesy dip that’s smooth, flavorful, and ready in minutes.


Ingredients

  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced green chiles, drained
  • 1 teaspoon taco seasoning
  • 2 tablespoons milk, plus more as needed
  • 1/4 teaspoon garlic powder
  • Pinch of salt, if needed
  • Optional toppings:
  • Diced tomatoes
  • Sliced jalapeños
  • Chopped cilantro
  • Green onions
  • Extra shredded cheddar
  • Crushed red pepper

Instructions

  1. Add the cottage cheese to a blender or food processor and blend until completely smooth and creamy.
  2. Add the taco seasoning and garlic powder. Blend briefly until combined.
  3. Transfer the blended cottage cheese mixture to a small saucepan. Add the shredded cheddar and 2 tablespoons of milk.
  4. Heat over low to medium-low heat, stirring frequently, until the cheddar has melted and the queso is warm and creamy. Do not boil.
  5. Stir in the drained diced green chiles.
  6. If the queso is too thick, add additional milk 1 tablespoon at a time until it reaches your preferred consistency.
  7. Taste and add a pinch of salt if needed.
  8. Transfer to a serving bowl and add your favorite toppings. Serve warm with tortilla chips or vegetables.

Notes

Blend the cottage cheese thoroughly before heating for the smoothest texture. Freshly shredded cheddar generally melts more smoothly than pre-shredded cheese. Use gentle heat and avoid boiling the queso. For a spicier queso, add sliced jalapeños, cayenne pepper, or use Pepper Jack cheese. If the queso becomes too thick, stir in a small amount of milk.
