Description
The viral TikTok Italian grinder sandwich — layers of cured meats, melted provolone, and the legendary creamy grinder salad on toasted crusty bread. Better than any deli, ready in 15 minutes.

- 4 hoagie rolls or Italian loaf sections
- 2 tablespoons softened butter
- 2 tablespoons grated parmesan
- 8 salami slices
- 8 pepperoni slices
- 8 prosciutto or ham slices
- 8 provolone slices
- 2 cups shredded iceberg lettuce
- 0.3 cups banana peppers or pepperoncini, sliced
- 0.5 red onion, very thinly sliced
- 1 tomato, diced
- 0.5 cups mayonnaise
- 1 tablespoons red wine vinegar
- 1 teaspoons Italian seasoning
- 0.5 teaspoons garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Cut the hoagie rolls or Italian loaf sections in half lengthwise and place cut-side up on a baking sheet.
- Mix softened butter with grated parmesan and spread on the cut sides of each roll.
- Fold the salami, pepperoni and prosciutto or ham while layering on the bread to create height.
- Layer salami first, then pepperoni, then prosciutto.
- Top with provolone slices slightly overlapping to cover the full surface.
- Bake until the bread is golden and the cheese is fully melted, about 5 to 6 minutes.
- While the bread toasts, whisk together mayonnaise, red wine vinegar, Italian seasoning and garlic powder with salt and pepper.
- Add banana peppers and red onion and stir to coat.
- Add shredded iceberg lettuce and toss until evenly dressed.
- Remove bread from oven and add diced tomato directly on the melted cheese.
- Pile the grinder salad generously on top.
- Press the sandwich down gently, cut, and serve immediately.
Notes
Bread is everything — use a crusty loaf with a hard exterior. Fold the meats when layering for extra height and more meat in every bite. Make the salad last minute to keep the lettuce crisp. Leftover grinder salad is incredible as a dip for potato chips. Vegetarian option: replace meats with grilled zucchini, eggplant and bell peppers.
