Description
Homemade honey lemon gummies made with water, liquid honey, lemon juice and unflavored gelatin. These are soft refrigerated candies, not shelf-stable packaged gummy bears.
Ingredients
120 ml (1/2 US cup) cool drinking water, divided into two 60 ml portions
85 g (1/4 US cup) liquid honey
30 ml (2 tablespoons) lemon juice, strained
21 g unflavored powdered gelatin (three 7 g envelopes)
Instructions
1. Place clean, dry silicone candy molds on a tray, with roughly 240 ml total capacity. Alternatively, line a 20 x 10 cm loaf pan with parchment.
2. Pour 60 ml cool water into a heatproof bowl. Sprinkle gelatin evenly over the surface. Let hydrate for 5 minutes or follow the package blooming time.
3. Warm the remaining 60 ml water with honey in a small saucepan over low heat. Stir until honey dissolves and liquid is hot. Do not boil or reduce into syrup.
4. Remove from heat. Add hydrated gelatin and stir gently until fully dissolved. Warm briefly over low heat if grains remain. Stir in strained lemon juice.
5. Let foam settle for 1 minute, skim it off, and pour into molds or the prepared pan. Do not add extra water to increase the yield.
6. Refrigerate at least 2 hours, until firm throughout. Deep molds may need longer. Unmold gently, or lift out the slab and cut into 24 small pieces. Keep refrigerated.
Notes
Yield: approximately 24 small candies; cavity size changes the count. This formulation has not been kitchen-tested by YumaRecipes. Gelatin brand and strength can affect firmness. Do not replace gelatin with collagen peptides or agar gram for gram. Store airtight at 4 C / 40 F or colder and use within 3 days as a conservative home-storage recommendation, not a validated shelf life. Not shelf stable. Honey-containing foods are not for infants under 12 months. Firm gummies can be a choking hazard for young children.
