Description

A warm, cheesy dip loaded with salami, pepperoni, provolone, and banana peppers over a creamy base — all the flavor of a grinder sandwich in scoopable, party-ready form.


Ingredients

For the base:

8 oz cream cheese, softened

1/2 cup mayonnaise

1/2 cup sour cream

1 clove garlic, minced

1/2 teaspoon dried oregano

1/4 teaspoon crushed red pepper flakes (optional)

For the toppings:

4 oz Genoa salami, chopped

4 oz pepperoni, chopped

1 cup provolone cheese, shredded

1/2 cup banana peppers, chopped and well-drained

1/2 cup roasted red peppers, chopped

1/4 cup red onion, finely diced

1/4 cup Parmesan cheese, grated

2 tablespoons fresh parsley, chopped (for serving)

For serving:

Sliced baguette, crackers, or garlic breadsticks


Instructions

1. Preheat the oven to 375°F (190°C) and lightly grease a small (around 8-inch) baking dish or cast iron skillet.

2. Make the base. In a bowl, mix the softened cream cheese, mayonnaise, sour cream, minced garlic, oregano, and red pepper flakes until smooth.

3. Spread the base. Spread the mixture evenly into the bottom of the prepared baking dish.

4. Layer the toppings. Scatter the chopped salami, pepperoni, banana peppers, roasted red peppers, and red onion evenly over the base. Top with shredded provolone and grated Parmesan.

5. Bake. Bake uncovered for 18-20 minutes, until the cheese is fully melted and lightly golden in spots.

6. Finish and serve. Sprinkle with fresh parsley and serve warm with sliced baguette, crackers, or breadsticks for dipping.

Notes

Pat wet ingredients dry — banana peppers and roasted red peppers can add excess moisture if not drained well. Broil the last 1-2 minutes for extra golden, bubbly cheese, watching closely. Use freshly shredded block cheese for the smoothest melt. Can be assembled up to 24 hours ahead and baked fresh. Leftovers keep 3 days refrigerated.
