All the ingredients you need for a perfect Mounds cake. 1 box Devil’s Food cake mix
- 3 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 1 can (14 oz) sweetened condensed milk
- 3 cups sweetened flaked coconut
- 1/2 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 2 1/2 cups confectioners’ sugar
- 1/3 cup cocoa powder
- 3–4 tablespoons milk
- 1/2 teaspoon almond extract (optional)
- Optional: Dark chocolate chips
- Optional: Sprinkle of sea salt
Instructions
Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line bottoms with parchment paper.- In a large bowl, mix cake mix, eggs, water, and oil. Beat until smooth. Divide batter between pans.
- Bake 25–30 minutes or until a toothpick comes out clean. Let cool 10 minutes, then transfer to wire racks to cool completely.
- For the filling: Mix condensed milk, coconut, and vanilla in a bowl. Chill for 15 minutes.
- For the frosting: Cream butter until fluffy. Gradually mix in sugar and cocoa. Add milk as needed until desired consistency. Stir in almond extract if using.
- To assemble: Place one cake layer on a serving plate. Spread with coconut filling. Top with second cake layer. Frost top and sides of cake.
- Optional: Sprinkle extra coconut or drizzle melted chocolate. Refrigerate at least 1 hour before serving.
Notes
Cool cake layers completely before assembling to prevent melting. Store covered in the fridge up to 5 days. Add ganache or simple syrup for extra indulgence.
