Korean-Inspired Yuja Ginger Gelatin Cups

  • Author: Yuma Recipes
  • Total Time: 4 hours 15 minutes
  • Yield: 2 small cups 1x

Description

A firm, spoonable Korean-inspired jelly made with prepared yuja tea, unflavored gelatin and ginger.

Ingredients

Scale
  • 7 g unflavored powdered gelatin (1 standard envelope)
  • 1 cup (240 ml) prepared yuja tea, cooled, divided
  • 1/4 teaspoon finely grated fresh ginger

Instructions

  1. Prepare yuja tea according to the product label and let it cool. Measure 1 cup (240 ml) after diluting the concentrate or marmalade; do not use 1 cup of undiluted concentrate.
  2. Reserve 1/4 cup of the tea in a bowl. Sprinkle the gelatin evenly over it and let bloom for the time on its package.
  3. Heat the remaining 3/4 cup tea in a small saucepan until hot. Remove from the heat. Add to the bloomed gelatin and stir until fully dissolved, gently warming if granules remain. Do not boil the gelatin mixture.
  4. Stir in the ginger and divide the mixture equally between two small cups.
  5. Refrigerate for about 4 hours, or until fully set. Serve chilled with a spoon.

Notes

Makes 2 small servings of about 1/2 cup each. This uses 7 g gelatin per cup of tea for a firm jelly; it is not the standard soft-gel ratio. For a softer result, use your gelatin manufacturer’s recommended amount for 1 cup of liquid. Brands and acidic tea mixtures can set differently. Prepared yuja tea often contains sugar from marmalade or concentrate; nutrition depends on the label and dilution. This is a Korean-inspired dessert, not a skin or weight-loss treatment. Chill time is approximate; allow longer if needed.
