Description

A homemade version of Dunkin’s Pumpkin Patch Cloud Latte, made with a real pumpkin swirl, vanilla syrup, and a cloud of sweet cold foam finished with cinnamon sugar. Not affiliated with or endorsed by Dunkin’.


Ingredients

For the pumpkin swirl:

1/4 cup pumpkin puree

1/4 cup brown sugar

2 tablespoons water

1/2 teaspoon pumpkin pie spice

Pinch of salt

For the vanilla syrup:

2 tablespoons sugar

2 tablespoons water

1/2 teaspoon vanilla extract

For the latte:

2 shots espresso (or 1/2 cup strong brewed coffee)

1 cup whole milk

Ice, if serving cold

For the sweet cold foam:

1/4 cup heavy cream

2 tablespoons milk

1 tablespoon powdered sugar

1/4 teaspoon vanilla extract

For topping:

1/2 teaspoon ground cinnamon mixed with 1 teaspoon granulated sugar


Instructions

1. Make the pumpkin swirl. In a small saucepan over medium heat, combine the pumpkin puree, brown sugar, water, pumpkin pie spice, and salt. Simmer for 3-4 minutes, stirring often, until slightly thickened. Remove from heat and let cool.

2. Make the vanilla syrup. In a separate small saucepan, heat the sugar and water until the sugar fully dissolves. Remove from heat and stir in the vanilla extract. Let cool.

3. Make the sweet cold foam. In a small bowl or with a milk frother, whip the heavy cream, milk, powdered sugar, and vanilla extract until thick and foamy, with soft peaks.

4. Brew the espresso. Pull two shots of espresso, or brew 1/2 cup of strong coffee.

5. Build the latte. In a glass, stir together 2 tablespoons of the pumpkin swirl and 1 tablespoon of the vanilla syrup. Add ice if serving cold, then pour in the whole milk and espresso, and stir to combine.

6. Top with cold foam. Spoon the sweet cold foam over the top of the latte so it sits in a “cloud” layer.

7. Finish. Dust generously with the cinnamon sugar mixture and serve immediately.

Notes

Use full-fat heavy cream for the cold foam for the best cloud-like texture. Strain the pumpkin swirl through a fine mesh sieve for an ultra-smooth sip. Make a double batch of the pumpkin swirl and vanilla syrup to store in the fridge for up to a week — future lattes take under 5 minutes.
