Description

An Indian-inspired vegan soya chunks stir fry with vegetables, tomato masala, and measured oil. Nutrition is estimated, and weight loss depends on the overall eating pattern.

Ingredients

Scale
  • 80 g dry soya chunks (not cooked weight)
  • 2 teaspoons olive oil
  • 100 g onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 200 g tomatoes, finely chopped
  • 150 g red bell pepper, diced
  • 150 g zucchini, diced
  • 60 g spinach
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon chili powder, optional
  • 1/4 teaspoon salt, or to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped cilantro
  • Water for hydration, plus 2–4 tablespoons for the pan

Instructions

  1. Hydrate the soya chunks according to package directions, usually by simmering in plenty of water for 5–8 minutes until tender. Drain, rinse, cool enough to handle, and gently squeeze out excess water. Cut large chunks in half.
  2. Heat the oil in a wide nonstick skillet over medium heat. Cook onion for 4–5 minutes, adding a tablespoon of water if needed. Add garlic and ginger; stir for 30 seconds.
  3. Add tomatoes, cumin, coriander, turmeric, chili powder, and salt. Cook for 4–5 minutes until the tomatoes soften into a thick masala.
  4. Add bell pepper and zucchini. Cook for 4–5 minutes, stirring, until just tender.
  5. Add squeezed soya chunks and 2–4 tablespoons water as needed. Toss and cook for 4–5 minutes until heated through and coated with masala.
  6. Stir in spinach and garam masala; cook for 1–2 minutes. Remove from heat, add lemon juice and cilantro, and divide into two equal portions.
